Blue Lemon is all shades of healthy

Highland’s newest restaurant is serving up fresh local cuisine
What’s Hot? What’s Happening? What’s Happy Cuisine?
All these answers can be found at the Blue Lemon, Highland’s newest restaurant. The Blue Lemon is the hottest trend in food establishments: Pure clean food served in a clean and inviting location, with amazingly affordable prices.
People can no longer complain, “I’d love to eat healthy, but I just can’t afford it.”
Upon entering the Blue Lemon, my first thought was to wait to be seated as the dining room was so well appointed with leather booths, Italian lighting and contemporary styling. I was sure this was a “sit-down and order restaurant.”
Then my daughter, Meagan, spied the sign “Place order here,” and I knew I was in for an dining adventure full of surprises. I stepped to the counter to query the waiter regarding what made Blue Lemon different. I quickly discovered my definition to “Happy Cuisine.” Everything is prepared with local fresh ingredients, made fresh on site, no artificial ingredients, with a mind conscious to health and happiness. What more can you want from a restaurant where every bite is heaven — yet good for you — and priced less than fast food!
Meagan ordered the Lemon Chicken Alfredo, which is usually a very heavy dish, but this one was transformed with less fat and more flavor.
I ordered the Grilled Balsamic Chicken Panni with grilled onions, tomato, melted fresh mozzarella, and lemon pesto aioli … OHMYGOSH! I ate every bite.
I also sampled the Sweet Potato Fries — which deviate from their devotion to “nothing fried” — but these do provide a whopping 262 percent of your daily need of Vitamin A and C.
Even on a Tuesday night, the place was hopping with business and definitely the “happening place” in northern Utah County. I saw some good friends of mine who have become regular customers. Eric told me next time to try the “Raspberry Chicken Salad” and be sure to ask for it “Eric Style” — extra candied pecans and feta! Yummm.
After dinner we strolled into the “Bistro” side, which offers bakery items and specialty beverages. In the name of “good research,” I had to try a few things! Their cupcakes were totally delicious and obviously homemade with the best ingredients and real French buttercream frosting.
A few of the rolls and pastries seemed to have been made earlier in the day, and I’ll want to try those again in the morning or at lunch. The staff on the restaurant side was attentive, fast and knowledgeable, but I didn’t have the same experience on the bakery side of things.
I often plan to return to my restaurants to taste the rest of the menu, but I find myself moving on to new openings and cuisine.
However, this is not the case at the Blue Lemon. I can’t wait to return with all my friends and family to share my “new find” and the Blue Lemon’s homemade soups, Fiery Fish Tacos and more cupcakes!
This restaurant is definitely worth the drive from anywhere in Utah County, and I hope they open more locations soon.
